Low Carb Breakfast Frittata



For those of you who have never heard of the frittata, it is basically an unfolded omelette, simple as that. It has eggs, veggies, cheese and if you like, throw a little sausage, ham or bacon in too. This dish is so versatile, I like to change it up every time I make it. I will use our favorite combination for this recipe though.



Ingredients:
  • 8 eggs
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped tomato
  • 1/4 cup chopped green onion
  • 1/2 teaspoon dried basil or 1-2 tablespoons fresh chopped
  • 1/8 teaspoon black pepper
  • salt to your own taste
  • 1/2 cup cheddar cheese grated
  • 6-8 oz sausage cooked and crumbled
  • 1 tablespoon olive oil
  • frying pan with oven safe handle

In a medium mixing bowl, beat the eggs, then add basil, salt and pepper. Place a large frying pan (preferably with non-stick coating) over medium heat add the olive oil. When the oil is heated, add the eggs, pushing the sides in as it cooks to allow some of the raw egg to flow underneath, do not stir, you will end up with scrambled eggs. When it's about half way cooked, top with the veggies, sausage and cheddar cheese. Put the pan about 8-10 inches under the broiler and finish cooking until it looks set and the cheese is golden brown. Make sure you keep an eye on it, or the cheese may burn. Cut into wedges as you would a pie. You can top this dish any way you like, but salsa and eggs can't be beat!
