Low Carb Banana-Coconut Cream Pie





This pie is so scrumptious! I just love banana and coconut together, they compliment each other so well. This recipe is super easy to whip up too. I am not a fan of meringue so I usually top this pie with fresh whipped cream and garnish with toasted coconut. Delicious!

This recipe makes 8 servings with 8 carbs each. If you use Splenda count the extra carbs. If you wish add one small sliced banana, it will add 2.6 carbs to each slice.

Low Carb Pie Crust



I used my mother's pie crust recipe as a basis for this tender crust, I just put a low carb spin on it. Mom always makes amazing pies! You can use other flours and meals if you like, just try to keep it low carb. You could add a little cinnamon for flavor as well, Yum!

This crust makes 8-10 servings with 4.68-3.75 each, depending on how large your slices are.

Low Carb Steakhouse Meatloaf



Who doesn't love a good steak? This recipe was made to mimic the delicious flavor of a grilled sirloin using steak seasoning and steak sauce. You can use any variety of ground beef but sirloin is simply delicious!

This recipe makes 6 main course serving with 3.5 carbs each (If using A1 steak sauce and low carb bread having 5 carbs each slice, I used Sara Lee 45 Calories and Delightful, Whole Wheat with Honey).

Low Carb Bread Pudding



Bread pudding is one of the comfort foods that reminds me of my childhood. My mom used to make it for our family quite often. Her bread pudding was Sooo Good! This recipe is just as delicious but without the added sugar and tons of carbs. You can use your favorite low carb bread for this dish. I usually use Sara Lee 45 Calories and Delightful. The 100% Whole Wheat with Honey variety only has 5 carbs per slice and tastes delicious! I topped this dessert with rum sauce but cream cheese glaze is delicious too.

This recipe makes 12 servings and has 4 carbs each. If you use Splenda make sure to count the extra carbs.

Low Carb Mock "Apple" Pie



I am so excited about this post! I have been searching for a low carb substitute for apples and I have finally found something perfect with only 5 carbs per cup. It's called a Chayote squash, yes a squash! Crazy I know, but you really can't tell the difference after you cook it with apple pie spice, sweetener and a little lemon juice. It looks like a fat green pear and kinda smells like an unsweetened apple, if you can imagine that. It is very crisp like an apple when it's raw and very good chopped in a salad. You can add it to soup or saute it like you would zucchini or any other squash. For pies and cobblers you will need to simmer it in water or 20-30 minutes first to soften it. Head to your local grocer and look for this very unique piece of produce, it is so versatile.

This pie makes 8-10 servings with only 8.5-10.5 carbs each if using carb-free sweetener and you omit the shredded apple. A traditional crumb topped apple pie has 48-60 carbs per slice!

Low Carb Black Forest Cake




I was inspired to make this recipe by my Sister-in-law Mary. She called me and told me about an amazing recipe she found on the internet for Black Forest Cake, though the recipe she found was not low carb. I put my low carb touches on it and it turned out amazing! It was very moist and very chocolatey! My husband couldn't believe this cake was sugar-free. Top this cake with my Low Carb Chocolate Buttercream Frosting and garnish with fresh whipped cream and sugar-free shaved chocolate.


This recipe makes 12 servings with 6.75 carbs per slice if you use a zero carb sweetener in the cake batter. If you use Splenda it will raise the carb count to 12.75 carbs per slice.

Low Carb Blueberry Waffles



Who doesn't enjoy hot, fluffy waffles? This recipe is easy to throw together and very delicious! You can add any berries that you like, but I chose blueberries for this recipe. If you like a buttermilk flavor you can add 1/2 tbls of white vinegar to the half & half. Allow it to sit and thicken for 2-3 minutes before adding it to the batter. Either way, you can't go wrong!

Low Carb Jelly Filled Bran Muffins



I recently bought a bag of wheat bran and couldn't wait to bake with it. Wheat Bran is high in fiber and low in carbs, only 16 per cup. These muffins are so moist and tender as is, but the jelly filling is the icing on the cake, Mwah! I chose sugar-free blackberry jelly, but you can use whatever kind you like. You will need to make the batter ahead of time, it needs to sit in your fridge for several hours before you can bake them. I prepared mine last night before bed and popped them in the oven this morning, they were simply delicious!

This recipe makes 24 muffins with 5.25 carbs each if using carb free sweetener. If you use Splenda they will have 6.25 carbs each.

Low Carb Mocha-Almond Biscotti



Biscotti is an Italian twice baked cookie that is very crisp and delicious. They are perfect for dunking into a cup of hot coffee or a mug of hot chocolate. There are many different variations of this cookie, mine is with instant coffee crystals and shaved chocolate. You can use whatever nuts you like, for this recipe I chose almonds. Have fun with this recipe and create your own favorite variation.

Low Carb Hot Chocolate or Hot Cocoa



The hot weather will soon be a thing of the past and what better way to warm yourself up than with a mug of hot chocolate or hot cocoa? I prefer the taste of homemade hot chocolate over the premixed powder in a can, who wouldn't right? This recipe is quick and easy to prepare. You can use unsweetened chocolate or cocoa powder in this recipe, both are equally delicious!

This post is long overdue, I just haven't had much spare time lately. I love zucchini bread yet it's one of those foods I only make during the Holidays, I'm not sure why though. Low Carb Tiramisu Cheesecake

I used dark rum and instant coffee crystals to flavor this dessert, but you can use any liqueur you have in place of the rum. Kahlua is great as well. Low Carb Cake Doughnuts with Coconut Crumb Topping



Here they are as promised! If you like coconut these doughnuts are sure to please. They are quick and easy to whip up and the minis bake up in just a few short minutes. I used toasted unsweetened coconut for the topping. Yummy! I hope you enjoy these tasty little treats.

The carb count will vary depending on the sweetener you use. I used Xylitol, Splenda and molasses yielding 18 mini doughnuts with 2.75 carbs each.

Low Carb Chocolate Cake Doughnuts



I don't know about you, but I have really missed eating doughnuts! I have been working on a few doughnut recipes of my own and this one is really good. I was in heaven this morning, I finally had coffee and doughnuts again! I even bought this handy mini doughnut maker that cooks them in less than 3 minutes, it's awesome! I am working on a vanilla doughnut coated in coconut, I'll be posting that one soon too :)

Low Carb Bread



Who doesn't love the smell of fresh bread baking? Yum! It has to be one of my favorite smells. I have tried several times to make a really good loaf of low carb bread, but wasn't thrilled with the final outcome. After several failed attempts I finally got it right! This recipe makes a very tender bread with a light wheat taste. I used my bread machine to do the mixing and kneading, but you can do it the old fashioned way, by hand. If you use your bread machine, remove the dough after the kneading cycle. Don't let it rise in your machine, it will not rise well a second time.

This recipe makes about 16 slices of bread, about 5.5 carbs per slice. I multiplied this recipe by 1.5 and got two large 10" loaves, 32 slices with 4 carbs per slice.

Low Carb Rum-Soaked Coconut Cake




Here is a to-die-for coconut rum cake recipe! It is very similar to a basic chiffon cake recipe, which made this cake very moist and tender. I used my Baking Mix, vanilla whey protein and coconut flour in this recipe. If you can't find coconut flour you can make your own by adding 3/4 cup unsweetened shredded coconut to the Baking Mix and pulsing it in your blender until smooth. The coconut palm sugar can be replaced with your favorite sweetener to reduce the carbs (about 4 carbs per slice), but I love the rich flavor it adds to this cake and it is a low glycemic sweetener. Rum syrup adds amazing flavor as well. You can top this delicious cake any way you like, a simple glaze would be wonderful, but a coconut-pecan frosting is Oh so good on this cake! 

This recipe makes 12-16 servings depending on how big your slices are. With 12-9 carbs per slice. If you replace the coconut palm sugar with a zero net carb sweetener you will reduce the carb count to 6.6-5 carbs per slice.

Low Carb Chicken Caprese



This recipe was suggested to me by my good friend and walking partner Keri. We chat about everything while we walk, especially food. Thanks Keri :) 
This is my low carb version of Olive Garden's Caprese Chicken. All I can say is Wow!! This is absolutely delicious! My family raved over this one, saying it was one of my top 5 best recipes. I used Dreamfields Low Carb Pasta, and breaded the chicken with my Low Carb Flour Mix, but you can use any low carb breading that you like. You can make a good "mock" buttermilk to dip the chicken in prior to dredging in flour by adding 1 tbls white vinegar to a bowl and adding 1 cup of half & half to it. Let it sit for 5 minutes and it thickens just like buttermilk, but without the added carbs, gotta love that.

This recipe makes 6 servings. With 10 carbs per serving without pasta and 15 per serving with pasta.

Low Carb Key Lime Sponge Cake




I absolutely love key lime pie! I figured why not a key lime cake. This sponge cake is so light and tender, very similar to the carb loaded version. I used my Low Carb Flour Mix, vanilla flavored whey protein and powdered Xylitol for this recipe. I recently purchased my first bag of Xylitol, despite the tummy bloating it is said to cause. The difference between it and Erythritol is the cooling effect is less noticable with Xylitol and it costs quite a bit less than Erythritol. Both are natural sugar substitutes but Xylitol is sweeter and tastes more like real sugar in my opinion. So far my tummy doesn't see any difference either. I think this will be my new go to sweetener.

Low Carb Homemade Pasta




This recipe was a special request from an anonymous follower. It gave me the perfect opportunity to play with a pasta machine I bought last year, but has been collecting dust in my cupboard. It was a lot of fun. You don't need one for making pasta, but it sure does make it easier. I think I only paid $40 for the one I have. I made fettuccine, pictured above. This pasta has the taste and texture of a wheat pasta, very flavorful! You could use these in an Asian stir-fry, top with spaghetti sauce, Alfredo sauce, etc... I used my Baking Mix and some added ground wheat germ. 

This recipe makes about 1 pound of pasta or 6-8 servings, with only 6.75-9 carbs per serving. Traditional white pasta has around 40 carbs per serving!! I hope you enjoy this delicious pasta.

Low Carb Blueberry Muffins



I made these muffins with my Flour Mix, ground flax seed and Greek yogurt. The yogurt keeps them moist and adds a nice tang to the flavor. The texture of these muffins came out perfect, not too fluffy and not too dense. There are million different ways to flavor muffins, get creative and see how many you can come up with.  :)

Low Carb Biscuits



Finally!! I have created a very tender biscuit I am proud to put on my blog. These are made using my Flour Mix and sour milk, made with vinegar and half & half. I was very surprised at how light and delicious these were. The flavor of the sweet almond meal really comes through. Now I just need a great low carb country gravy to go with these. Give these a try, they are quick and easy to make. Also, if you bake them in a greased muffin tin they will rise a little higher. I will keep you posted on the gravy :)

This recipe makes 10 biscuits, and only have 4.5 carbs each. Biscuits made with white flour have about 22 carbs each!!

Low Carb Pizza Crust



For the past 10 years or so, every Tuesday in our house has been "Pizza Night"!! Since today is Tuesday, I figured this is the perfect time to post this recipe. When I started this Low Carb Lifestyle I knew that I would have to come up with a good recipe for pizza crust. I wasn't going to be left out of our family tradition. My husband is now on the band wagon and, for the most part, is eating low carb as well. He even eats low carb pizza with me. I like to brush olive oil or garlic butter on the crust before I bake it, Yum! You can top this pizza any way you like. The sky is the limit when it comes to pizza toppings, just try to keep it low carb. What is your family favorite? I would love your feedback!

Sugar-Free Chocolate Sauce, Chocolate Syrup and Ganache

Making your own sugar-free chocolate sauce and syrup is very easy. It's cheaper and in my opinion better tasting than the store bought variety. You can add cinnamon or flavored extracts as well.

Sugar-Free Chocolate Sauce:
  • 2 oz unsweetened chocolate 
  • 1/4 cup sweetener +/- to suit your own taste
  • 1/2 tsp vanilla
  • 1/2 cup heavy cream 
In a medium sauce pan over medium heat, add cream and sweetener, bring to a low boil. Remove from the heat and stir in vanilla and chocolate until it melts and is very smooth. You can add more cream if needed to reach your desired consistency.
This recipe has only 7 carbs if you use a zero carb sweetener.

Sugar-Free Ganache:

If you reduce the cream in the chocolate sauce recipe to 1/4 cup you will have a ganache for candy making. Add in other extracts with the vanilla, nuts, sugar-free candy or roll in cocoa powder for flavored chocolate truffles. Yummy!!
This recipe has only 5.5 carbs if you use a zero carb sweetener.

Sugar-Free Chocolate Syrup:
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp vanilla
  • 1/4 cup sweetener +/- to suit your own taste
  • 3/4 cup water
In a medium sauce pan add all of the ingredients except vanilla and bring to a low boil over medium heat. Reduce the heat to low and simmer for 5-10 minutes until it thickens to your desired consistency. Stir in vanilla. This is perfect for making chocolate milk or dessert topping.
This recipe has only 5.5 carbs if you use a zero carb sweetener.

Low Carb Coconut Cake with Chocolate Buttercream Frosting



This recipe was inspired by my Sister-in-Law Mary Ann. She called me and asked  for some ideas on making a coconut cake, it got my wheels turning. Thanks Mary :)

Anyone who knows me, knows that I love coconut! This recipe is loaded with the delicious white stuff. I used coconut flour, coconut milk and coconut extract. I also used coconut palm sugar in this recipe, though it doesn't taste like coconut. The granulated form tastes like brown sugar and the solid pieces you grate taste like honey. It is also low on the GI scale similar to agave. You can use another sugar substitute if you prefer. This is a dense cake similar to a pound cake, don't expect it to be light and fluffy. Also, this recipe makes a 9" round cake, double the recipe if you wish to make a 2 layer cake.

Sugar-Free Chocolate Buttercream Frosting



Making sugar-free frosting is quite simple, not much different than making fudge frosting. I've tried the sugar-free store bought variety and it just doesn't cut it, almost gummy in texture. I love the creamy texture of this chocolate frosting and you can control how sweet it will be. Use whatever dry sweetener you like, but if you choose Erythritol, make sure to use the powdered form. I prefer half powdered Erythritol or Xylitol and half granulated Splenda. For those of you who can tolerate it, powdered Xylitol works well in this recipe. The flavor is very similar to powdered sugar.

Low Carb Chicken Alfredo with Bacon and Pesto

Low Carb Parmesan and Herb Crackers



I'm not a fan of store bought low carb crackers. They are normally hard as a rock or tasteless! I created this recipe using my low carb flour mix and added some flax and wheat germ. There is only 40 carbs in this entire recipe. It made about 50 crackers that were 1.5 inches square, that's about 0.8 carbs each, pretty good! I'm working on a cheddar cheese cracker recipe and I will post that one soon too. You can add whatever spices you like to this recipe. These are tender-crisp and very delicious!

Low Carb Banana Muffins



I love banana muffins, but bananas aren't exactly on the low carb food list. I improvised my favorite banana bread recipe to create these moist, delicious muffins. I used my low carb baking mix for this recipe and only one small banana along with imitation banana extract. They are wonderful hot out of the oven with butter! And only 6.3 carbs each. You could reduce the carb count by using a different flour/meal combination.

Sugar-Free Chocolate for Cookies and Candy

This is my version of sugar-free chocolate. It is easy to make yourself. Buying it online gets expensive! This takes only a few minutes to prepare.


Sugar-free chocolate Recipe:
  • 2 oz unsweetened baking chocolate (chopped)
  • 2 tbls heavy cream
  • 1/4 cup sugar substitute +/- (powdered works best)
In a microwave safe bowl melt chocolate at 30 second intervals, stirring in between until smooth. Warm the heavy cream and add it to the chocolate with the sweetener and mix well until sweetener has dissolved, reheating for another 20-30 seconds if necessary. You can also make this on your stove top over low heat. Taste to see if you prefer more sweetener. Pour mixture into a foil lined loaf pan or cookie sheet, depending on how much you will be making. Spread the mixture out so it is about 1/2 inch thick. Place into the freezer until firm. Then cut or shave into desired sized pieces. You can double or triple this recipe to suit your needs. You can stir in nuts or chopped candy before you place into the freezer. I'm going to attempt to make chocolate chips with this recipe as well, wish me luck!

I have been working on this mix for a while. I finally have a pretty good combination of flours and meal that works great in my low carb baked goods. I use Carbalose flour all of the time, but many people don't have it on hand as I do. I wanted to put together a baking mix that is made from products you can find in most grocery stores on a regular basis.

Low Carb Blueberry Coffee Cake



This recipe isn't like a traditional coffee cake. It is made using almond meal, which has only 12 carbs per cup, perfect for low carb baked goods. If you can't find almond meal, it is simple to make your own using a blender. Add about 1/4 cup of almonds at a time and grind in 10 second intervals until fine, you don't want to generate too much heat. A sweet cream cheese layer sits atop this cake, along with blueberries and cinnamon streusel. You can use any berry you like, I have used raspberries and they are wonderful with this cake as well.

Low Carb Chocolate Peanut Butter Cookies



For this recipe I used whey protein powder. I know, sounds strange, but it is a great baking medium and has very little carbs. It helps keep my low carb baked goods moist. This recipe could easily be altered if you prefer a traditional peanut butter cookie, just use vanilla flavored whey protein and omit the cocoa powder. Make sure you adjust your recipe for the missing cocoa and add 3 tablespoons of protein or whichever flour you used.

Low Carb Cheddar-Jalapeno Corn Muffins



These corn muffins are a perfect compliment to my Chili With Grilled Sirloin, you can't have one without the other, it just wouldn't be right. I cut the corn meal in half and substituted oat flour and flax meal to make up the difference. You could also use my baking mix. They only have about 7 carbs each. There is no added oil in these muffins either, I used Greek yogurt and vegetable glycerin instead. These come out of the oven moist and tender and taste fabulous! You can't go wrong with cheese and warm bread. My family loved them!

Low Carb Chili with Grilled Sirloin



This recipe calls for beans, YES beans! I used small red beans (not kidneys) which are very high in fiber, having only has 7 net carbs per1/2 cup serving. Grilled sirloin and smokey chipotles gives this dish a very rich hearty flavor, hamburger just doesn't do it justice. A perfect meal for a cold rainy day. This recipe makes about 6 main dish servings, having only 8.5 carbs per serving.

Low Carb Mint Chocolate Chip Ice Cream



Mint Chocolate Chip is my all time favorite ice cream. This recipe is a basic custard style ice cream, very rich and creamy. You can simply omit the eggs if you prefer a lighter ice cream. If you can't find sugar free chocolate you can make your own easily, I added a recipe for that below. With summer approaching fast, I will be using my ice cream maker more and more. There is nothing better on a hot day than fresh homemade ice cream, Yum! Low Carb Carrot Cake



This cake is so easy and delicious! It's not a scratch cake, I used a mix. There are some pretty good low-sugar and sugar-free mixes on the market now. I use them as a base for my low carb cakes. I reduce the carb count in my cakes even further by substituting 1 cup of Carbalose flour for 1 cup of the mix, add 1/3 cup sugar substitute, 1/2 tsp vanilla and 1/2 tsp baking powder. So get creative, the possibilities are endless!

Low Carb Coconut Almond Candy Bars



These are so good! They taste like an Almond Joy, one of my favorite candies, but without the sugar.  I love anything made with coconut and chocolate, these candies are simply delicious! My family couldn't tell there was no added sugar in them.
