Low Carb Chicken Alfredo with Bacon and Pesto



I love pasta, any kind of pasta! This recipe is a big hit in our house. I added bacon, pesto and a little dry white wine to this dish, the flavor is incredible! Now I just need to come up with a low carb bread recipe to go with it. :)

Ingredients:
  • 2-3 chicken breasts
  • 2 slices of bacon cut into small 1/2" pieces
  • 3 tbls dry white wine
  • 2 cups heavy cream
  • 1/2 cup butter
  • 1 cup fresh grated Parmesan cheese
  • 1 tbls basil pesto (optional)
  • 1 box Dreamfields spaghetti
  • salt and pepper to taste

Begin by grilling the chicken until thoroughly cooked and no longer pink. I usually grill mine 5-6 minutes per side. Tent with foil and set aside. In a large pot, cook pasta according to package directions. While the pasta is cooking, heat a large saucepan over medium heat. Add bacon and cook until browned but not crispy. Drain off most of the fat and add the white wine, simmer for about one minute to cook off the alcohol. Turn the heat down to medium-low then stir in the butter and heavy cream, when the butter has melted add the fresh grated Parmesan cheese. Stir until the cheese has completely melted and the sauce is very smooth and creamy. Salt and pepper to taste and if you wish, stir in the pesto at this point. Serve over spaghetti and top with the sliced grilled chicken. Bon Appetit!
